Many will agree that breakfast is the most important meal of the day. A healthy breakfast can give your morning a boost of energy or can leave you cranky and bogged down for the rest of the day if you skip it or opt for an unhealthy highly processed one. For a few years now I have made breakfast a priority to avoid eating the first unhealthy item my eyes connects with. Once you get the hang of making breakfast every morning it really becomes second nature.
Check out my fast & easy breakfast ideas:
I have a smoothie almost every morning. To me it is very easy to make all you need is a liquid base (almond milk, coconut milk, water, or milk of your choice) and fresh or frozen fruits of your choice. This is completely optional but you can also add hemp seeds, almond butter, soaked nuts, dates, shredded coconut, and whatever other healthy options to add extra nutrients to your smoothie. In the past I would add vegetables like spinach and kale but I stopped doing that once I discovered they do not digest well when combined with fruits.
When in a rush and I cannot blend my breakfast, I opt for fresh fruit to go. This is truly the meaning of fast food. It is available for quick access. You just simply need to wash and cut them.
Recently I have started making omelettes using garbanzo bean flour. This savory dish is quick to make and is very reminiscent of egg omelettes. I add onions, peppers, brazil nut cheese, and sometimes tomatoes.
I eat eggs on some occasions mainly when I am on vacation, in which case I often do not have access to a fridge or blender. I love eating eggs and salmon on a toasted croissant! I am currently working on removing eggs from my diet or at least not eating them too often for health reasons.
Occasionally I have pancakes or waffles (preferably homemade) with 100% maple syrup.
